Two Sparkling Sangria Recipes for Mother’s Day Weekend

Sangria makes a perfect way to celebrate Mother's Day weekend, especially when it's one like this with fresh berries and the Italian sparkling wine Brachetto or it's made in the traditional Spanish-style.

It’s hard to feel like celebrating when Cinco de Mayo falls smack dab in the middle of the week. And then the next thing you know, here comes Mother’s Day.  I see no reason why you shouldn’t roll the two celebrations into one by mixing up a pitcher of wickedly delicious sangria that everyone in the family will love.

With fresh strawberries, raspberries and blueberries coming into season, a perfect way to use them is in this Ruby Red Sangria that’s included in my book The Bubbly Bar.  Instead of a dry red wine, the base of this one is brachetto, a sweet tart sparkling wine from Piedmont Italy. It tastes of raspberries and roses and was a favorite tipple even in ancient times.

The inspiration for this recipe came from Tom Mastricola, a fabulous mixologist originally from Boston who served it at the pool deck at Arterra in the San Diego Marriott Del Mar. It’s refreshing but has a way of sneaking up on you with the crème de cassis and cognac.

I’ll be showing how to make my Ruby Red Sangria and a Sangria Blanca made with the Spanish sparkling wine cava and sharing some great  summer drink tips  as the guest mixologist June 5 & 6 at the Sunset Magazine’s Celebration Weekend 2010. More than 20,000 people will be flocking to the magazine’s gorgeous campus in Menlo Park to pick up inspiration and ideas on summer cooking, home entertaining, and gardening. Ruby Red Sangria

This fragrant sangria stars fresh summer raspberries, blueberries and strawberries with the sweet -tart red sparkling wine from Piedmont, Italy called Brachetto d’Acqui.The cognac and crème de cassis add an extra layer of depth and flavor.

16 raspberries
16 blueberries
16 strawberries
1 cup Landy cognac, chilled
1/2 cup crème de cassis
1/2 cup Homemade Sour Mix
1/4 cup orange juice
1 bottle Brachetto d’Acqui, chilled
8 slices orange
8 slices lemon

Add the berries to a cocktail shaker and muddle them to a juicy pulp. Transfer the muddled berries and juice to a pitcher. Add the cognac, crème de cassis, sour mix and orange juice. Stir well to combine. Just before serving, add the chilled Brachetto to the pitcher. Fill the serving glasses halfway with crushed ice. Add an orange slice and lemon slice to each glass, then fill with the sangria.
Makes 8 servings

I recently picked up some more ideas about sangria while travelling in the Penedès region southwest of Barcelona, which is the center of Spain’s cava sparkling wine production. Gareth York, the Brit export manager for Mont Marçal Cava – available all over the U.S. -  shared his own recipe for a Spanish-style sangria. The secret ingredient is European Lemon Fanta, which he says adds just the right sweet tart flavor.

Gareth’s Sangria

1 750 ml bottle cava (or decent red wine)

750 ml European Lemon Fanta
3/4 cup ruby port wine
1 small glass of brandy or cognac
1 orange, washed, pitted and sliced
1 lemon, washed, pitted and sliced
1 apple, washed, pitted and sliced
1 ripe peach, washed, pitted and sliced

Mix all the liquids together in a large pitcher, add the fruit and macerate in the fridge for four to five hours. Don’t add too much ice as this waters the sangria down. The Lemon Fanta works well as it has a nice balance of sugar and acidity and there is no need to add sugar. The proportions of the wines and Fanta are approx. if you want it to have more of a kick then add a bit less Fanta.

What is important is that the wines are of a decent quality and drinkable. I always said when I was in the kitchen, if you put good wine in a dish, it will be good – if you put a bad wine in a dish it won’t get any better!!

Four Organic Sparkling Wines for Earth Day Weekend

The weather was odd this Earth Day 2010, with strong showers  and wind alternating with patches of sun. It’s like Mother Nature is bi-polar, or she’s trying to show off all of her stuff in one day.

One of the best ways to show your love for the planet and your body is by drinking wine made from organically grown grapes. These wines used to be hard to find, but these days with increased awareness about the dangers that pesticides can pose to the earth, farm-workers and end consumers, there’s lots of choice. One of the best places to find international organic wines online remains The Organic Wine Company and Whole Foods Markets around the country also have a good selection. I especially like sparkling wines made from organic grapes. My favorite sparkling wines have a sheer and elegant quality to them and this seems to be magnified in sparkling wines and champagnes made from organic grapes.

Plus I find that winemakers who produce an organic sparkling wines – one of the hardest styles to make – share this reverence their vineyards and nurturing them so they yield the best clusters of grapes. On a recent trip to Spain, winemaker Ton Mata of Cavas Recaredo told me that he tested out growing without pesticides or chemical fertilizers, his vineyards let him know that this was what they needed. Now their production of 300,000 bottles of long aged cavas called gran reservas are all made with organically grown grapes. I found the same passion for the land talking to Jim Milone of Terra Savia in Mendocino and Eileen Crane of Domaine Carneros in Napa.

Some people feel guilty about drinking wine that has had to be shipped for thousands of miles, because of the fossil fuel burned up along the journey. So in the interest of being completely eco-friendly this Earth Day, I’m offering a list of some great green wines from around the world.

Terra Savia Blanc de Blancs – I stumbled across the wine at Andy’s Market in Sebastopol one day and bought it because I was thrilled to find an organic grape sparkling wine for under $25. My friends and I loved its bright green apple notes and clean flavors balanced with a hint of toastiness.

La Cantina Pizzolato Prosecco Conegliano Valdobbiadene - For five generations the Pizzolato family has been growing grapes in the northern Italian town of Treviso. In 1991, their Treviso vineyards were certified organic. They now produce a range of organic proseccos including from the Treviso and Valdobbiadene DOCs as well as a sparkling chardonnay and a raboso, a red grape that produces sprightly, fruity wines. The prosecco typically sells for around $15-16.

Domaine Carneros Brut Rosé Cuveé de la Pompadour – Since 2005, all the wines from this Taittinger-owned house in Napa have been made from organically grown grapes; the estate’s vineyards were certified organic in 2008.  Winemaker and CEO Eileen Crane says the vines just seem more vigorous, it’s better for the workers and the wines taste even better. The Brut Rosé is completely dry, but has wonderful strawberry and plum flavors thanks to the predominance of pinot noir.  It’s $25 to $30 a bottle.

All the cavas are aged long on the yeast to produce a complex flavors, they’re aged on the cork, disgorged by hand and are finished with no sugar in the dosage, making them brut nature in style. About $35.

A red orb with all those juicy seeds inside, a pomegranate just suggests fertility and promise. It’s thought to be the tempting forbidden fruit that seduced Adam and Eve in the Bible. In the Greek myth, Persephone was forced to spend half the year in the Underworld after she was tricked into eating a few pomegranate seeds during a visit to Hades. All in all, these myths make the pomegranate a pretty fascinating and tasty fruit.

We’ve all gotten word that pomegranates are chock full of healthy antioxidants, vitamins and minerals which scientific studies show can help reduce wrinkles, lower blood pressure and prevent heart disease. Pomegranate is also a great source of folic acid, which is an important nutrient for pregnant women. If you’re trying to get pregnant, it turns out pomegranate can help in that department too. A researcher at the University of California found that pomegranate is good for men with erectile dysfunction and prostate health. And a study at the University of Sussex (another sex study from the UK, hmmm) found that drinking pomegranate juice increases the libido in women and even more so in men.

 

Featured on San Diego Fox 5 my cocktail called Kismet – which means fate – is sure to get something started with this combo of pomegranate, passion fruit and ginger which is great or heating things up. To make a non-alcoholic version, substitute pomegranate juice for the Pama, ginger juice for the ginger liqueur and sparkling water for the wine. Kismet was one of the romance enhancing cocktails I featured on San Diego Fox 5 this morning.

With tangy pomegranate, passion fruit juice and ginger in the Kismet Cocktail, it's sure to stir something up.

Kismet

1 ounce Pama pomegranate liqueur
1-1/2 ounces passion fruit-orange juice
1/2 ounce ginger liqueur
3 ounces sparkling wine
3 pomegranate seeds

Add Pama pomegranate liqueur, passion-fruit juice and ginger liqueur to a champagne flute. Top with chilled sparkling wined. Garnish with the pomegranate seeds.

It’s so easy to take honey for granted: sweet, cloying and sticky stuff without much personality. But it’s always been one of those foods, along with strawberries and whipped cream that shall we say has plenty of sex appeal.

The term honeymoon comes from the Viking tradition of leaving newlyweds alone for a month to get to know each other. They were encouraged to drink lots of mead – wine made from fermented honey – as it was considered an aphrodisiac. Even today, Indian bridegrooms are given honey on their wedding night to increase their stamina.

It turns out honey contains boron, a trace mineral that’s important for a number of different body functions including hormone production. Boron helps increase estrogen levels in women as well as testosterone levels in men and women, which is important for libido. Honey also contains B vitamins which play a role in estrogen production and another natural substance called chrysin that helps keep testosterone levels constant. But enough of all that. Now that you know what’s in it, here’s a charming little cocktail I created that makes good use of honey and damiana extract, another natural aphrodisiac found in the supplement aisle at Whole Foods.

small section of honeycomb
1-1/2 ounces Barenjager Honey Liqueur
1/2 ounce bourbon whiskey
1/2 ounce fresh lemon juice
1/2 ounce egg white – the real thing, not pasteurized
pinch dried lavender (optional)
2 drops damiana
2-3 ounces brut sparkling wine or champagne

Put the honeycomb in the bottom of a champagne coupe or small cocktail glass. Add the honey liqueur, bourbon, lemon juice, egg white an lavender if using and damiana to a cocktail shaker filled with ice. Shake hard until will chilled and frothy. Add the bubbly to the coupe, then strain the contents of the shaker into the glass. Garnish with a couple lavender blossoms.

Days of Wine & Chocolate: A Valentine Dinner Feb. 11 in San Diego

Every year as we approach Valentine’s Day, you hear the word aphrodisiac tossed around. Spanish fly, bananas, potatoes, strawberries, chili peppers – you name it – has been considered an aphrodisiac at one time or another in human history. But this year, I decided to research the foods that have a documented scientific effect on arousal.

Two foods that just happen to have an actual effect on pleasure and libido (the goal of most aphrodisiacs when you get down to it): wine and chocolate!

In case you’re curious about how these foods work to get things heated up; let me share some science. Chocolate causes women to release endorphins, those. In fact a 2007 study at the University of Sussex in Great Britain found women release four times as many endorphins – the body’s natural opiates – after eating chocolate as they do after when making out.

Wine grapes – specifically the skins – contain the antioxidant resveratrol. Researchers at Northwestern University (my alma mater – Go Cats! ) found in a 1997 study that resveratrol – most present in red wines – acts in the body like an estrogen which is a key component in sex drive and arousal.

Wow, just think what will happen after eating those two at the same time!

Even without the science, there’s something tantalizing and romantic about sparkling wine and champagne- another reason why I think these wines should be enjoyed much more often.

On the whole, I think 2009 will be remembered as the year of moderation. Nearly everyone is looking for ways to be smarter about how they spend their money. While champagne and sparkling wines seem like a luxury – and they are a luxurious experience — they don’t have to come with a high price tag. One of the most useful features of my book The Bubbly Bar is a guide to buying bubbly in every price range. You could drink wine with your turkey… or maybe an artisanal beer. But wouldn’t a cocktail be more fun? Well, I’ve selected 3 great seasonal cocktails from The Bubbly Bar with refreshing, tangy and spicy flavors to perfectly complement your turkey dinner: The Ginger Snap, the pomegranate Lava Lamp and The Stiletto which offers subtle orange and cognac flavors.

In the spirit of giving, here’s the recipe for the super-popular Lava Lamp.

The Lava Lamp, a tangy blend of Pama pomegranate liqueur and brut sparkling wine does a great stand-in for cranberry sauce. The tart-sweet pomegranate will cut through the rich flavors in gravy, stuffing and turkey. It would also be tasty with a juicy slice prime rib. The bubbles in the sparkling wine make the pomegranate seeds rise and fall in the glass, giving this drink the appearance of a retro lava lamp. A flute with a long hollow stem shows off this effect best.

1 ounce Pama pomegranate liqueur or 3 tablespoons pomegranate juice
5 ounces brut sparkling wine
3 pomegranate seeds

Add pomegranate liqueur or pomegranate juice to a champagne flute. Fill glass with sparkling wine. Drop in the pomegranate seeds.

Last weekend I went up to Beverly Hills to create a sparkling cocktail from The Bubbly Bar at a luncheon that included the wives of many professional basketball players and a few Hollywood celebrities.

Behind the Bench is a non-profit charitable organization run by the wives of current and former NBA basketball players. This year’s festivities culminated in an awards luncheon that honored actress Angela Bassett and director Penny Marshall.

Schramsberg’s Cremant was the featured wine at the luncheon staged at the hip and modern SLS Hotel in Beverly Hills. A blend of Flora and Gewurztraminer grapes, the Schramsberg Cremant is a sweeter style known as a demi sec. The ladies sipped a cocktail from my book called the Stiletto, a subtly potent blend of Grand Marnier, Navan cognac and sparkling wine as an aperitif.

Chef Nikki Shaw and DeShawn Snow formerly of Real Housewives of Atlanta were the co-emcees of the luncheon where Marshall and Bassett took the stage to accept their awards. Bassett’s husband Courtney B Vance, who played District Attorney Ron Carver on five seasons of Law & Order Criminal Intent, was there to cheer his wife on.

How to Open a Bottle of Champagne – The Right Way!

Just last night I was having dinner with a really smart and fun foodie friend who loves, cooking, wine and cocktails. At one point the conversation turned to sparkling wine and champagne – big surprise!

But I was surprised when she admitted that when it came to opening bubbly, she usually handed the bottle off to someone else.

If you’ve been suffering from a secret fear of opening a bottle of bubbly, don’t despair! With the help of my TV reporter friend Kristi, I’ve recorded this video to teach anyone how to open that bottle of bubbly safely.

As you’ll read in the introduction of my new book “The Bubbly Bar: Champagne & Sparkling Wine Cocktails for Every Occasion” the first thing to do is to make sure to chill your sparkling wine properly for 30 minutes to an hour in the refrigerator or an ice and water bath. There’s the same amount of force behind a flying cork and a bullet leaving a gun barrel; making sure the bottle is nice and cold ensures that everything will go smoothly.

Now grab a cloth napkin, your cold bottle of bubbly and let’s get popping!

It’s been quite the whirlwind since my book The Bubbly Bar: Champagne & Sparkling Wine Cocktails (Clarkson Potter, $16.99) launched a few weeks ago. It’s amazing how many different skills it takes to be an author; not only do you need to know enough about a topic to write about it, once you’ve done so and had the incredible good fortune to get a book published, then you need to become an expert at marketing, event planning and logistics! All that is to say that with the help of some friends, I’ve put together some fun Bubbly Bar book events that will start happening around the country in a couple weeks.

If you’re a Bubbly Girl – or even if you just like to have fun while tasting some sparkling wine cocktails and learning something new, then I hope you’ll come out to join the fun as I make my way around the country. Oct. 7 – Moet Champagne Cocktails & A Sparkling Book Party at The Edison, 108 W. Second Ave. 5:30 to 7:30
p.m. Meet me in the Tesla Lounge for an intimate literary cocktail party featuring Moet & Chandon champagne cocktails and appetizers at this unique vintage-style bar in downtown LA. Wear business or cocktail attire – the Edison has a dress code. Stick around for the sexy cabaret show starting at 8 in the main bar. Tickets are $20 and include a signed book and bubbly. Oct. 12  – The Bombay Bubbly Experience at Beekman’s Bar & Books, 889 1st Ave (At 50th) 5:30 to 7:30 p.m.
We’ll explore the unique synergy between fine aromatic Bombay Sapphire gin and bubbly at this cocktail demo and party at Beekman’s, a warm and clubby bar that’s filled with thousands of books. I’ll be mixing drinks along with resident bartender Ben Scorah – GQ Magazine’s NYC Bartender of the Year- and Bombay Sapphire U.S. Mixologist James Moreland.  Tickets are $25 and include cocktails, food and signed books. Napa County

Oct. 24- Cocktail clinics & book signing at Domaine Chandon, 1 California Drive, Yountville. I’ll be lounging in the gift shop of this modern showcase winery and giving two cocktail clinics featuring drinks from the book throughout the day. Cocktails from The Bubbly Bar will also be available for purchase at the tasting bar. Come up and make a day of it by taking a behind the scenes tour of the winery and treating yourself to a bubblicious lunch or dinner at Etoile! Free event!

Washington DC

Nov. 4 – Cava and Latin Libations at Masa 14, 1825 14th St. NW, Washington DC 5:30 to 9 p.m.
Masa 14 is the hot new restaurant by Richard Sandoval and Kaz Okochi that serves Latin and Asian small plates in a hip setting. We’ll explore the fine Spanish sparkling wine called cava and Latin libations from The Bubbly Bar paired with small plates from the restaurant. NYC

Dec. 12 – Book signing & Weekend Tasting at Harlem Vintage, 2235 Frederick Douglass Blvd. 4 to 7 p.m. Perrier-Jouet Champagne will be the featured champagne at this tasting and book signing at Harlem Vintage in this famous neighborhood that was home to lots of gin joints and speakeasies dating back to the classic cocktail era. A bottle of international bubbly and a signed copy of the Bubbly Bar make a fabulous and fast holiday gift. Harlem’s own Hue-Man Bookstore will be our book-selling partner for this special tasting.
